Classic German Potato Pancakes


If there is one thing Chef Josef Karst is known for, it’s bringing traditional Oktoberfest cuisine to Pittsburgh.  Using his grandmother’s recipes, he introduced Pittsburgh to some classic German fair, like Sauerbraten, Jägerschnitzel and the ever so tender (and big) Pork Shank!  In honor of Oktoberfest this month, Josef is sharing his simple, yet perfect, potato pancake recipe.



2 Lbs Peeled, hand-shredded russet or baking potatoes

1 Cup Small diced onions

1 Tbsp. Kosher salt

1/2 Tsp. Ground white pepper

1/4 Cup Chopped parsley

4  Eggs

1/4 Cup Breadcrumbs

1/2 Cup Shredded cheese [optional] 

2 Tbsp. Flour   [optional] 

Vegetable Oil  


Step 1:   Mix all ingredients well.

Step 2:   Hand portion into 2.5oz -   ¼ inch thick
Step 3:    Pan fry in plenty of hot vegetable oil - use your favorite iron skillet 



For best results make sure your skillet has enough hot oil, crisp, golden brown potato pancakes take about 1 minute on each side and, you the “chef” need to stay with it while your guests enjoy hand-made German potato pancakes with apple sauce, sour cream, or perhaps smoked salmon (as shown in photo).
